Rockmelon, prosciutto & bocconcini skewers

  • 1 rockmelon
  • 1 tub of bocconcini
  • 12 slices of prosciutto
  • Wash the rockmelon, slice in half, and remove seeds from each half
  • Use a melon scoop to form 24 melon balls
  • Cut each prosciutto slice in half
  • Thread alternate pieces of folded prosciutto, bocconcini and rockmelon on skewers
