- 2 large smoked chicken breasts
- 1 medium Piel de Sapo melon, diced
- ½ a bag of mixed salad leaves
- A medium bunch of green grapes
- 1 or 2 ripe tomatoes
- ½ cup fresh basil
- Optional 1 avocado, cubed
- Dressing
- Juice of 1 small lime
- ½ cup virgin olive oil
- 1 tbsp white wine vinegar
- juice and rind of 1 lime
- 2 tsp finely minced fresh ginger
- 2 tbsp finely chopped basil
- ½ tsp brown sugar
- Thinly slice the smoked chicken
- Combine all the salad ingredients, add salt and pepper to taste
- Whisk the ingredients for the dressing, and pour over the salad
